dc.description.abstract	La COVID-19 es un riesgo biológico y un problema de salud pública, de importancia internacional, debido a la rápida expansión y al alto número de casos reportados en diferentes países del mundo. Los lugares con mayor riesgo de expansión al virus y de altas tasas de contagio son mercados y supermercados; debido a que estos concentran mayor afluencia de personas. El estudio de investigación se realizó en los mercados del distrito de San Borja, considerando que actualmente cuenta con 8 mercados de abastos y tiene una densidad poblacional de 113 247 habitantes según el Censo Nacional 2017; la cual acude a estos mercados. Por ese motivo es necesario investigar el conocimiento y cumplimiento de las medidas de bioseguridad por parte de los trabajadores de los mercados. Para el presente estudio se planteó el siguiente objetivo: Describir el conocimiento y cumplimiento de las medidas de bioseguridad y las condiciones sanitarias implementadas frente al COVID-19 en el expendio de alimentos y bebidas en los mercados del distrito de San Borja. El estudio se realizó en 8 mercados del distrito, los cuales cuentan con 14 rubros de comercios, para las entrevistas se consideró el total de trabajadores de los 8 mercados, haciendo un total de 611 trabajadores. Se identificó que, del total de trabajadores, el 94.6 % cumplen con las “especificaciones técnicas para la prevención y contención de la COVID-19”; y el 61.74 % de personas refieren que conocen sobre la misma. De la misma manera, se identificó que del total de trabajadores el 96.4 % cumplen con la “implementación mercados saludables que cumplen las especificaciones técnicas para la promoción de la alimentación saludable y contención de la COVID-19”; y el 82.1 % de personas conocen. Respecto al nivel de cumplimiento de las condiciones sanitarias de los mercados, se determina que los 8 mercados se encuentran en el nivel de cumplimiento aceptable.	es_ES
dc.description.abstract	COVID-19 is a biological risk and a public health problem, of international importance, due to the rapid expansion and high number of cases reported in different countries around the world. The places with the greatest risk of virus expansion and high infection rates are markets and supermarkets; because they concentrate a greater influx of people. The research study was carried out in the markets of the San Borja district, considering that it currently has 8 food markets and has a population density of 113,247 inhabitants according to the 2017 National Census; which goes to these markets. For this reason, it is necessary to investigate the knowledge and compliance with biosafety measures by market workers. For this study, the following objective was set: Describe the knowledge and compliance with the biosafety measures and sanitary conditions implemented against COVID-19 in the sale of food and beverages in the markets of the San Borja district. The study was carried out in 8 markets in the district, which have 14 types of businesses. For the interviews, the total number of workers from the 8 markets was considered, making a total of 611 workers. It was identified that, of the total workers, 94.6% comply with the “technical specifications for the prevention and containment of COVID-19”; and 61.74% of people report that they know about it. In the same way, it was identified that of the total workers, 96.4% comply with the “implementation of healthy markets that meet the technical specifications for the promotion of healthy eating and containment of COVID-19”; and 82.1% of people know. Regarding the level of compliance with the sanitary conditions of the markets, it is determined that the 8 markets are at the acceptable level of compliance.	es_ES
