La industria del huevo de gallina en diversos países se ha visto influenciada por la presión social entorno al bienestar de las gallinas. El objetivo de este estudio fue el de analizar las percepciones y las actitudes respecto a la crianza, manejo y bienestar de las gallinas de postura, así como la intención de compra de huevos con estándares altos de bienestar animal en consumidores de huevos de Lima, Perú en 2021. Se elaboró una encuesta tipo cuestionario y se determinó su validez por evaluación de expertos y posteriormente la prueba V de Aiken. Se aplicó la encuesta en la etapa piloto (29 personas), determinando así tres niveles de baremos (indiferente, moderado y sensible). Posteriormente, se administró la encuesta virtual a 386 personas. Los resultados fueron procesados mediante estadística descriptiva y analítica. Se encontró que el nivel de percepciones y actitudes respecto a la crianza, manejo y bienestar de las gallinas de postura estaba asociada (p<0.05) con el sexo del encuestado, la edad, la ocupación, el tipo de dieta, el lugar principal de compra y la disposición para comprar huevos de crianza alternativa. Además, el 34% (131) de encuestados se ubicaron en el segmento “indiferente”, el 34% (137) en el “moderado” y el 30.6% (118) en el segmento “sensible”. Asimismo, se halló que el 76.6% de encuestados están interesados en adquirir huevos con estándares más altos de bienestar y el 89.3% tienen una disponibilidad de pago desde el 14% hasta el 100% más de lo que pagan actualmente. Se espera que la información generada mediante este estudio exploratorio pueda contribuir al desarrollo de emprendimientos de huevos de gallinas diferenciados con valores agregados de bienestar animal, potenciado una producción más sostenible en el tiempo.The chicken egg industry in various countries has been influenced by social pressure regarding the welfare of the laying hens. The objective of this study was to analyze the perceptions and attitudes regarding the rearing, management, and welfare of laying hens, as well as the intention to purchase eggs with high standards of animal welfare in egg consumers in Lima, Peru. in 2021. A questionnaire was developed, and its validity was determined by expert evaluation and subsequently the Aiken V test. The survey was applied in the pilot stage (29 people), thus determining three levels of scales (indifferent, moderate, and sensitive). It was found that the level of perceptions and attitudes regarding the rearing, management and welfare of laying hens was associated (p<0.05) with the sex of the respondent, age, occupation, type of diet, main place of purchase and willingness to purchase alternatively reared eggs. In addition, 34% (131) of respondents were in the "indifferent" segment, 34% (137) in the "moderate" and 30.6% (118) in the "sensitive" segment. Likewise, it was found that 76.6% of respondents are interested in buying eggs with higher welfare standards and 89.3% are willing to pay from 14% to 100% more than what they currently pay. It is expected that the information generated through this exploratory study can contribute to the development of chicken egg businesses with added values of animal welfare, promoting a more sustainable production in time.
